A Big Family Favorite

Ingredients
Pie Dough:
1.5 Cups Einkorn Flour (or regular flour)
1.5 Cups Tapioca Starch
3 Tbsp Baking Powder
1/2 Tsp Salt
5 Tablespoons Olive Oil
1 Cup Hot Water
Meat Filling:
3lbs Ground Beef
2 Tbsp Olive Oil
1 onion
1 Clove Garlic
1 Bell Pepper (optional)
1 Tomatoe
2 Tsp Salt
1 Tsp Onion Powder
1 Tsp Garlic Powder
Mayo Mixture
1/4 Cup Mayo
1 Tbsp Mustard
1 Tbsp Stone Ground Mustard
1 Tbsp Apple Cider Vinegar
Preparation
Step 1
Combine all dry ingredients for Pie Dough in a mixing Bowl. Add Oil and hot water , making sure not to wait before stirring and blending completely. Once dough starts to take shape and forms into a sticky ball, cover and set aside.
Step 2
While Dough is resting, slice tomatoes (set aside in a small bowl for later)
Next Mince garlic and lightly saute.
Next, thin slice your onion (and optional Bell Pepper). Add onion (and Bell pepper) to stove top pan with garlic in it and sauteed on medium until fully cooked and lightly browned.
Step 3
Turn stove off and set onions aside for now.
Pie dough should be less sticky now to shape, sprinkle tapioca starch as needed while shaping dough
To shape dough: Separate dough into equal parts (should make around 6-8) roll into balls. Line baking sheets with parchment paper. Place dough ball on parchment paper and push down , flattening into a 4in circle. Roll in the edges (as you would a pizza crust). Continue until all the dough has been shaped. Cook in oven at 350 for 15 minutes.
Step 4
While Pie dough is cooking; Put the onion pan (with onions still in it) back on medium heat. Add in ground Beef. Add all remaining seasonings (excluding tomatoes) and stir well till beef is fully cooked (all browned no pink remaining) **Make sure to separate ground beef using wooden spoon as it cooks to prevent large chunks)
Step 5
Combine mayo, Vinegar, Salt, and mustards in a small bowl till fully blended and creamy.
Step 6
Time to make you pies! First spread a small spoonful of Mayo Mixture onto Pie Crusts. Next Spoon ground beef mixture over Mayo Mixture filling up the Pie Crust completely. Finally sprinkle chopped tomatoes over top. Enjoy!
