Roasted Mashed Potatoes

Ingredients
5 LB bag Russet Potatoes
1 Pint Heavy Cream
1 Stick Butter
1 whole Garlic head
1 TBS Beef Tallow **optional
1.5 Tsp Salt
1 Tsp Celery Salt
1 Tsp Garlic Powder
1Tsp dried rosemary
1/2 Tsp Paprika
Preparation
Step 1
Peel Potatoes and chop into quarters. Peel garlic, and set aside.
Step 2
Boil Potatoes until fully cooked (usually 20-25minutes)
Step 3
While Potatoes are boiling, roast garlic in oven at 375 until golden brown (about 15-20minutes)
Step 4
Strain Potatoes, keeping (1/2cup of boiled water, separated for later)
Add Potatoes to Large mixing Bowl (or stock pot). Blend with hand blender or potatoe masher until fully mashed
Step 5
Add Butter, Cream and Tallow and blend/mash until creamy. Slowly add in saved water as needed till desired creamy consistency is reached
Step 6
Add dried seasonings (garlic powder, salt, celery salt, paprika) and blend well.
Step 7
Finally add in roasted garlic, mixing gently by hand.
