About the Recipe

Ingredients
4-5 lbs Chicken (breast or boneless thighs can work too)
3-4 Limes
2-3 tsp Salt
3 tsp Garlic Powder
1/3 cup Olive Oil
1/4 cup Avocado Oil
1/3 cup Vinegar (Red wine, apple cider or white wine)
1 Onion (any onion)
1 Bunch Fresh Cilantro
**Adobo all purpose seasoning
Preparation
Step 1. Cook your chicken, after cooking your going to shred your chicken. My preference is to throw it in the crock pot on low for 4-6 hrs. I season each chicken breast (or boneless thighs) FREELY with Adobo seasoning on all sides (while you can simply substitute with salt, I HIGHLY recommend this seasoning its a main component of the amazing flavor and outcome. (throw in a cup of chicken broth, or water , and a tsp salt) The chicken will self shred when done by simply pulling at it with tongs. MY second choice is to throw it in the air fryer , bake setting 325F for about 45min. You can also bake it in the oven at 350, make sure to cover it to trap the juices inside this will take about 45min - 1hr.
Step 2. While your chicken is cooking mix up your marinade. Combine salt, garlic powder, oil and vinegar, and lime juice in a bowl and set aside (adding amounts proportionate to the lbs of chicken being cooked. For example, 4lbs chicken, Ill use closer to 3tsp salt rather than 2)
Step 3. Finely chop the onion, and Cilantro and set aside.
Step 4. Once your chicken is fully cooked, go ahead and shred it (save the juices/broth )
Take your shredded chicken and pour the marinade over, mixing well (I like to use tongs to easily toss the chicken and marinade together).
-now add your onions and cilantro , and toss.
Step 5. You want a juicy mix for lots of flavor, add in all or most of the broth the chicken cooked in, and feel free to add a little more of lime juice or vinegar if needed to get a juicy mix and flavorful final result.
Tip: if you find your final marinade to be too tangy, a tbs of either honey or agave adds the perfect balance.
